Micro Crystallized Basil

Pineapple Cucumber Gazpacho, Lime Air, Micro Crystallized Basil
Ingredients:
Gazpacho
5 English Cucumber (peeled, seeded, diced)
1 Whole Pineapple (peeled, diced)
2 Teaspoon Cinnamon½ teaspoon Kosher salt
½ teaspoon Black Pepper (cracked)
¼ cup Simple Syrup½ cup Water
Combine all ingredients into a blender and blend well until allingredients are totally liquefied.
Lime Air
1 cup Lime Juice
1 teaspoon Lecithin
In a small pot using a hand blender blend contents until foamy air is created.
To Assemble
In a shot glass fill with Gazpacho ¾ full, then top with Lime Air.
Finish with Micro Crystallized Basil
