CELERY ICE CREAM with OSSETRA CAVIAR
Ingredients
- Fresh Origins® Micro Huauzontle™
- Lemon Agrumato Oil
- Ossetra Caviar
FOR THE ICE CREAM:
- 470g whole milk
- 220g liquid glucose
- 140g egg yolk
- 90g sugar
- 6g salt
- 210 Chinese Celery Leaves
Instructions
Ice Cream
- Puree the first five ingredients together in a blender.
- Pour the mixture into the vacuum bag and seal.
- Cook the mixture for thirty minutes at 82°C in a water bath or combi oven. When the mixture is done cooking, remove it from the water bath/oven and cool completely in an ice bath.
- Blanch the celery leaves in lightly salted water and cool in an ice bath. Squeeze out all the water, chop coarsely and transfer to a blender.
- Add the custard base and blend thoroughly till the mixture is emulsified and bright green in color.
- Strain the ice cream base through a fine meshed sieve.
- Transfer to an ice cream machine, process and hold frozen.
ASSEMBLY
- Prepare a well-chilled clear bowl or other vessel.
- Add about 1 tablespoon of the Lemon Agrumato Oil.
- Top with the celery ice cream.
- Place a teaspoon of Ossetra Caviar on top of the ice cream.
- Finish the dish by adding Fresh Origins® Micro Huauzontle™ on top.
- Drizzle with a few more drops of the lemon oil.
- Serve immediately.
