Add simple syrup and fresh Mint Apple Tops to a rocks glass and muddle gently to release the oils of the mint.

Add bourbon and fill half way with pebble ice. Mix gently to combine.

Top rest of glass with pebble ice and garnish with a few sprigs of Mint Apple Tops.
