PECORINO LABNEH TOAST

Ingredients

  • Micro Nasturtium Leaf
  • Chives Blossoms
  • Mustard Flower
  • Petite® Sorrel Meadow Mix™
  • Onion Flower
  • Micro Flowers Blend™
  • Radish Flower
  • Fennel Flower

PECORINO LABNEH:

  • 1 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1/4 cup grated pecorino cheese

FENNEL FLOWERS AND GARLIC FERMENTED HONEY:

  • 500 grams raw honey
  • 5 garlic cloves peeled
  • 6 Fresh Origins® Fennel Flower

FOR THE TOAST:

  • Day-old bread, sourdough or whole wheat preferred.
  • Pecorino labneh whey (liquid from the strained yogurt)
  • Fermented honey
  • Extra virgin olive oil

TO FINISH:

  • Fresh Origins® Micro Nasturtium Leaf
  • Fresh Origins® Chives Blossom
  • Fresh Origins® Mustard Flower
  • Fresh Origins® Petite® Sorrel Meadow Mix™
  • Fresh Origins® Onion Flower
  • Fresh Origins® Micro Flowers Blend™
  • Fresh Origins® Radish Flower

Instructions

PECORINO LABNEH:
  1. Line a colander with 8 layers of cheesecloth. Place the colander in a large bowl, making sure that there is at least 5 inches between the bottom of the colander and the bowl.
  2. Mix all ingredients well and then allow to strain through the cheesecloth for 24 hours in the refrigerator. 
  3. Transfer the labneh from the cheesecloth after the 24-hour period into a covered container.
  4. Keep aside the whey that has strained from the labneh in a covered container, to use for the toast. (Note you will have more labneh than you need).
FENNEL FLOWER AND GARLIC FERMENTED HONEY:
  1. Add the garlic and fennel to the honey jar, cover and let it ferment at room temperature for a minimum of 10 days. During this ten-day period, you should notice some bubbles. 
  2. After ten days, open the jar and use a clean spoon to stir the honey. The consistency should be liquid. (Note you will have more honey than you need).
TOAST:
  1. Cut the bread into 1cm x 10cm rectangles.
  2. Dip the bread in the whey on each side, making sure it has absorbed the whey (do not soak).
  3. Toast on the grill until crispy, brush it lightly with fermented honey and olive oil while hot.
TO FINISH:
  1. Transfer some of the pecorino labneh to a piping bag and pipe it over the rectangle toasts.
  2. Cover up the toast with Fresh Origins® products. 
  3. Finish the toast with a spritz of fresh lemon juice and olive oil and serve.
